This recipe is barely adapted from Dan Pelosi’s Garlicky Citrus dressing! It’s so good! I add more red pepper flakes (of course, it has to be spicy!) and half the recipe to serve two. You can double up by following his recipe! Add chickpeas if serving as a main. 

Serves 2

Ingredients for the dressing

  • 1/4 cup of Olive oil
  • 3 to 4 garlic cloves 
  • 1 and 1/2 tablespoons of freshly-squeezed lemon juice (usually that’s 1 and 1/2 lemons)
  • 1 tablespoon of spicy brown mustard 
  • Lots of red pepper flakes 
  • Calabrian chili paste (option) 
  • Kosher salt and pepper to taste

Ingredients for the salad

  • 2 bunches of Tuscan kale, cleaned and finely chopped 
  • Parmigiano Reggiano or Pecorino Romano for finishing 
  • Butternut squash, roasted 
  • Pepitas, toasted and salted 

Directions  

  1. Add all the ingredients for the dressing to a blender or food processor. Taste and adjust with more salt, spice, lemon juice, etc. 
  2. Toss some of the dressing with the kale. Taste again and adjust. I like to add cheese, squash, and pepitas to the salad but the options are endless!
