Ingredients
- 2 cups garbanzo beans or 1 15 or 16 ounce can, drained and rinsed
- 2 tablespoons taco seasoning or the whole package
- I cup water
Directions
- My way: Drain the beans and using a potato masher, mash the beans until they’re crumbly but still have some texture. You can also do this in the saucepan. Then heat oil in a saucepan; add beans, taco seasoning, and all of the water.
- Boil, and then simmer for about 30 minutes, until most of the liquid is gone.
- My mom’s way: Combine the beans and ¼ cup water in a food processor. Process until it looks crumbly, not smooth. Stop and scrape down the sides, add more water if needed.
- Heat oil in a saucepan and add beans, taco seasoning, and water.
- Boil, and then simmer for about 30 minutes, until most of the liquid is gone.
- Warm and char some tortillas and top with your favorite fixings. I usually top with guacamole, pickled onion, slaw, cilantro, and salsa!
