Sesame-Peanut Pesto

Recipe adapted from Smitten Kitchen! 

Serves 2

Ingredients 

  • 1 tablespoon toasted sesame seeds
  • 1/2 cup peanuts
  • 1 small clove of garlic 
  • 2 tablespoons of soy sauce
  • 2 tablespoons of sesame oil
  • 1 tablespoon of rice vinegar
  • 1 jalapeno
  • 1 serrano 
  • A small handful of cilantro 
  • A pinch or two of sugar 
  • Salt to taste if needed

Directions  

  1. Add all the ingredients to a blender or food processor and process until smooth. You can add a little water to thin it out!

To serve 

  • I roasted two heads of broccoli. Once out of the oven, I tossed the broccoli in the pesto. This would be great on any veggies you like. You can serve it along tofu or any protein of choice!
