Marinade for one block of tofu
- 3 tablespoons rice vinegar
- 3 tablespoons toasted sesame oil
- 2 tablespoons fig jam
- 2 tablespoons mayonnaise
- 1 tablespoon of tamari
- 2 Serranos, minced
- Salt
- Green onions
To serve
- Lettuce cups
- Avocado
- Peanuts
- Cilantro
Directions
- Mix all the ingredients together for the marinade in a bowl. I air fried the tofu for about 20 minutes until crispy, but cook your tofu to your liking. Let the tofu cool slightly before adding it to the bowl with the marinade.
- Once you add the tofu, stir in the cilantro and taste for salt. I use let this hang out for a bit and cool to room temperature.
- Add the tofu to the lettuce cups along with peanuts, avocado, and any other toppings you like.
- Drizzle any leftover marinade on top!
