Vodka sauce with canned crushed tomatoes 

Ingredients 

  • A couple of tablespoons of olive oil or so 
  • 5 cloves of garlic, finely minced or grated 
  • 1 yellow onion, finely chopped 
  • ½ cup of Vodka or so 
  • 1 28-ounce can of crushed tomato
  • Kosher salt to taste 
  • 5 tablespoons of butter
  • Calabrian chili paste and red pepper flakes 
  • Fresh basil 

Directions  

  1. Heat the oil over medium to high heat in a large pot or Dutch oven and then add the onion. Cook for a few minutes, add garlic, and cook until softened and sightly caramelized.
  2. Pour in the vodka, let it cook off, and reduce it by at least half, then stir in the tomatoes. 
  3. Season with salt and reduce the heat to simmer for 20 minutes. 
  4. Blend the tomato sauce and then stir in the butter and chilies. I also added fresh basil. Taste for seasonings. 
  5. Serve as a pizza sauce or pasta sauce!
