Ingredients
- A couple of tablespoons of olive oil or so
- 5 cloves of garlic, finely minced or grated
- 1 yellow onion, finely chopped
- ½ cup of Vodka or so
- 1 28-ounce can of crushed tomato
- Kosher salt to taste
- 5 tablespoons of butter
- Calabrian chili paste and red pepper flakes
- Fresh basil
Directions
- Heat the oil over medium to high heat in a large pot or Dutch oven and then add the onion. Cook for a few minutes, add garlic, and cook until softened and sightly caramelized.
- Pour in the vodka, let it cook off, and reduce it by at least half, then stir in the tomatoes.
- Season with salt and reduce the heat to simmer for 20 minutes.
- Blend the tomato sauce and then stir in the butter and chilies. I also added fresh basil. Taste for seasonings.
- Serve as a pizza sauce or pasta sauce!
