Zucchini Butter Pasta

We absolutely love the zucchini butter pasta from Smitten Kitchen! I’m linking to her recipe because you should make it as she’s written it. I only wanted to include a few notes for myself ie how many zucchinis to use because I can’t deal with pounds haha.

Notes:

  • Double everything so you’re using a pound of pasta
    • We like spaghetti or Mezzi rigatoni 
  • Use 4 medium-sized zucchinis 
  • Grate the zucchini on the smaller side of the box grater
  • Finish with Calabrian chili paste and lots of red pepper flakes
  • We like a lot of freshly grated Parmigiano Reggiano and basil
